Sweet Sugar Free Cornbread Muffins

photoIngredients:

1 c. Arrowhead Mills Organic Yellow Cornmeal

3/4 c. Authentic Foods Multi-Blend GF Flour

1/4 c. Bob’s Red Mill Organic Coconut Flour

1 tbsp. Hain Pure Foods GF Baking Powder

1/2 c. Xylitol or other natural sweetener (pulsed in blender until powdery)

1 tsp. Hain Pure Foods Sea Salt

1 c. organic rice milk, hemp milk, almond milk, etc. warm

2 Ener-G Egg Replacer “eggs” whipped until foamy (follow directions on box), use 2 organic eggs if no egg allergy

4 tbsp. Whole Foods 365 brand or Spectrum brand Organic All-Vegetable Shortening (palm), melted

I Just Made The BEST Waffles!

Waffles… as many of my friends and family know, I have been attempting to perfect my GFCFSFEF waffle recipe for almost 3 years.  I think today I may have finally done it… or I’m darn close.  I took a small bite of one and I was blown away by the flavor!  Better than a “regular” waffle!  And that was with NO SYRUP!  I was able to make them crispy on the outside and cake-like on the inside… the perfect combination, in my opinion. New Recipes: Carrot Chocolate Chip Cookies, Spiced Sweet Potato Fries and Oven “Fried” Chicken

Last month I experimented with Zucchini Chocolate Chip-Chunk Cookies; today I decided to try carrot.  Instead of using the same recipe, Charlie and I found a cookie recipe by Tyler Florence (one of Charlie’s favorite chefs).  The recipe, My Big Fat Chocolate Chip Cookies was easily morphed into a recipe compatible with Charlie’s current dietary restrictions.  Charlie and I are very happy with the results! So Delicious Cultured Coconut Milk (yogurt)

You know, a product like Turtle Mountain Cultured Coconut Milk (yogurt) can be used in so many wonderful ways.   For instance, I’ve had a little container of the plain flavored yogurt in my fridge for about a week.  I kept looking at it wondering what I could do with it; the obvious being Tzatziki Sauce.  But since I have no plans of homemade gyros anytime soon, I kept thinking.  And then it hit me…. Ranch Dressing / Veggie Dip!!

Got (food) Allergies?

New IgG/IgE results are in… IgG results are looking better than ever; but, IgE results are worrisome.  And because of that, we can kiss the easy life of GFCFSFEF goodbye.  We’ve gotta add some more letters to that string…  Now it’s more like:

GFCFSFEFBFSFCFBYFPFPFPBFNFRF
gluten, casein, soy, egg, beef, shrimp, corn, baker’s yeast, pork, peas, pinto beans, nuts, chicken, and rice free. Whew, that’s a mouthful!

Shrimp?!?  Shrimp!?!?  Oh Lord, not the shrimp!  O.M.G… RICE??  Corn??

It’s okay, I’m just having my initial shock response.  I’ll be fine in the morning.  I’ll have a plan and I’ll make up some new recipes.  Charlie will still be the best fed kid around.  And he’ll still be happy.  ‘Cause that’s how he rolls dog… happiness above all else.

Damn, my recipes are about to get very interesting (for lack of a better word).  Stay tuned, I’m still trying to figure all of this out.  I wonder if he is allergic to bumble bee wings and fairy dust…

Oh Canada! Cookies (aka Cookies Eh?)

Have I mentioned my husband is an alien?  Not from Mars, although sometimes I question that.  No, my husband is Canadian.  I try to embrace the Canadian culture as much as possible, for Michael’s sake, by drinking a few beers here and there, and by using maple syrup whenever possible. ;)   I also try to keep Canada alive for Charlie, so that he knows his heritage.

Zucchini Chocolate Chip-Chunk Cookies!

Yesterday I was poking around on Care2.com and found a recipe for Zucchini Chocolate Chip Cookies. I thought this sounded like something I could reinvent for Charlie, being that he begs me to make him “regular looking chocolate chip cookies instead of those puffy, round things.” ;-)

Now, keep in mind, I have no purpose for ingenious ways to hide veggies in my child’s food.  Why, you ask?  Because my son loves to eat veggies, all veggies, raw.  Don’t try to cook them (unless it is broccoli), he won’t touch them.  But if you put any fresh, crunchy veggie in front of him, he’ll plow through them as if they were candy.  It’s quite amazing to watch.  He’s been doing this with most veggies since he started the GFCF diet – carrots he started eating at a very early age.

Sometimes I Just Need To Be Inspired

Lately my inspiration is coming from Lend4Health, and Tori’s GFCFSF Blog (I’m still waiting to see how the GFCF Poop Blog inspires me… should be interesting to say the least… LOL).

The L4H site has provided me with a renewed vigor for life.  To put it simply, I CAN MAKE A DIFFERENCE, even if it is only in a small way, because every little bit helps.  I’ve been inspired to reach down deep and help when I thought I could only help my own child and family.  I’m a better person for it.  I feel good about what I am doing.  My heart feels good.  I’m sure you know what I mean.
